Weekend, Menu Planning, and More Randomness...

We have been keeping busy lately! My mom had surgery last Thursday and my dad was scheduled to have surgery today (his got postponed) so we wanted to check in with my family to make sure all was well, (thank you Lord, it is!) We drove out to Dallas and spent some time with them as well as Chad's parents and his brother and step brother.

We went to Chad's dad's church: Elevate Life, a church we frequented when we lived in Dallas when we weren't attending The Village. The pastor's name there is Keith, and he really is phenomenal to listen to: a really passionate man for God. He did a message on seeing love, studying the corinthians. It was exactly the message I needed to hear at that moment, and Chad felt the same way.

We came back to Jasper Sunday afternoon as I wasn't feeling well. I hate having a cold/allergies now because I am trying to not take anything for it but it's very hard!

Work has been busy - TAKS test this week.

To unwind tonight, I did my menu planning and grocery shopping. I know that's weird, I do that to unwind -- but it really does relax me. I got to thinking about how crazy this year has been. Last year Chad and I had at least somewhat similar hours so I always had dinner ready for both of us. This year our hours are rarely the same, so I started cooking more for just me... now I realize that's not fair to Chad who comes home and eats 'Hungry Man' tv dinners nightly... I know it's his choice, and it is hard to cook for someone who is so incredibly picky (won't touch hardly any veggies, hates anything 'white' (sour cream/cream cheese/etc), doesn't like casseroles, the list goes on...) but I am trying to get better on cooking my meals when he's working, and meals the two of us can enjoy when he's home. I am actually really excited about this week's menu as I think I finally got it down! I might post it later. :)
